For the Puddings we soak the dried fruit in Stout and Rum overnight so they are plump and juicy, once assembled the mix is put into pudding basins and steamed for several hours, before unmolding and wrapping in an attractive green cellophane and tied with a ribbon, lable and small Christmas ornament. The small pudding makes a great hostess gift. Cooking instructions for the microwave are included on the lable. Traditionally the pudding is served with whipped cream and brandy butter (hard sauce) The cakes are started in the same way. Fruit is soaked overnight in rum and molasses and the next day the cakes are baked in a slow oven for a minimum of 3 hours. You can order cakes either iced with marzipan and royal icing or plain.
